The immune system can become overactive, responding to substances that it normally wouldn’t react to. This is what happens in allergies the body reacts as if allergic symptoms were triggered by something harmless.

Allergic reactions occur when your immune system produces a large amount of immunoglobulin E (IgE) in response to an environmental substance that you’re allergic to.

If you are exposed to the same allergen a second time, your body’s IgEs will recognize it and activate certain immune cells that produce chemicals responsible for producing allergy symptoms.

Food Allergy or Food Intolerance?

Food allergies and food intolerances are both forms of physiological responses to certain foods. However, a person with an intolerance lacks the ability to digest or metabolize that particular component in its usual way – whereas someone who has an allergy is hypersensitive to a specific protein found in that food.

A classic example of this is lactose overreacts to a certain type of food. The two common types are immediate-onset and delayed-onset reactions.

A food allergy is when an immediate or IgE-mediated allergy creates symptoms immediately to within 2 hours, and those symptoms – hives, throat closing, etc – are noticeable enough to not want to eat that food again! Delayed-onset or IgG-mediated food allergies may take 2 to 72 hours (3 days later) for symptoms to present, and these subtle symptoms can include brain fog and fatigue.
